Our baguettes are again a hybrid of sourdough levain for flavour, and commercial yeast. A blend of Marriages organic strong white flour, Shiptons organic wholegrain spelt flour, our baguettes are left to ferment overnight before being shaped the next morning, and being baked in a hot oven. Best eaten within 1 day. Store in a dry, cool place. Suitable for freezing. Contains gluten.
Our oat sourdough and our nephew’s favourite loaf! A blend of Marriages organic strong white flour, Molina Dellagiovanni Flour, Shiptons organic wholegrain spelt flour, combined with porridge to provide a moister loaf and a softer crumb that keeps for longer. Although best eaten as soon as possible, this will keep for up to 5 days. Store in a dry, cool place. Suitable for freezing. Contains gluten.
Our ciabatta is 100% sourdough, using leftover 'pasta madre' sourdough starter. it is combined with Italian Caputo Novola Flour, salt and olive oil before fermenting for a further 24 hours. Although best used as soon as possible, this will keep for up to 3 days. Store in a dry, cool place. Suitable for freezing. Contains gluten.
Our focaccia is a hybrid, using a sourdough levain and a small amount of commercial yeast. Using Italian Caputo Novola flour, we not only use a sourdough levain, but use a flour scald and a yeasted biga, inspired from Hart Bageri, to enable the bread to hold as much water as possible for the most moist crumb. This is combined with a large amount of unfiltered extra virgin olive oil and topped with seasonal vegetables. Although best eaten as soon as possible, this will keep for up to 5 days. Store in a dry, cool place. Suitable for freezing. Contains gluten.
Our brioche uses a hybrid of our sourdough levain, and a small amount of osmotolerant yeast to stabilise the dough due to the amount of butter and eggs enriching the dough. Using Armagh’s chapel lane organic eggs, organic unsalted butter and Organic Brioche Foricher flour from France, our brioche is best eaten as soon as possible, but will keep up to 3 days. Store in a dry, cool place. Suitable for freezing. Contains gluten, dairy, eggs.
